She Cooks! Cheeseburger and Sweet Potato Fries Pizza

Yesterday was my day off from work! It was amazing, I drove into town and went to Walmart and Ross and Whole Foods-- since gas prices have finally reached $5.00/gallon we've really had to budget wisely. No more spontaneous trips into town for me! :( Now, I only go to the other side when I need to restock. Sigh, tis the island life. Anywho. The Hubs has been working so hard lately-- I thought I would do a day full of surprises for him! He loves surprises and I don't do them enough, so this was my opportunity. The surf FINALLY came in yesterday-- Praise the LORD because the Hubs was going stir crazy. Poor guy, had been waiting and waiting for weeks! Just the other day he thought there might be a few little waveys coming in, so he woke up at 4:45 AM to check it out! Feeling defeated he arrived home shortly after. So when I saw the waves yesterday morning, I knew what a blessing it was going to be for him! Right after work Casey went surfing and after surfing I surprised him and we went to a new Gelato place on front street. Ono Gelato. Sooooooooo ooonnnooo. We got Lilikoi/Sea Mist and watched the surfers at the harbor. P.S.- The Jonas brothers were there...no big deal.

The Hubs has been really into pizza lately. Like.. he will buy a FEW frozen pizza's from Safeway and has no problem polishing off those puppies. So, last night I decided to experiment a little and make a heartier pizza for him with just a little more oommph than those dinkey ones from Safeway. Thanks vanilla sugar for the great idea. He ended up LOVING it.. I'm not joking, every time he took a bite he made some kind of noise. If you've got a big man to feed or your just hungry like I was, this one is a must try!

Defrost your sweet potatoes for 20 min prior to making your pizza

Cook your Moo. Then set aside.

Onions Carmel

Ok, people. It's ALL about the carmelized onions. Don't let them try your patience, they are late bloomers and can take up to 30 minutes.

The dough almost won, but I showed it who's boss.

1 pizza dough (I used whole wheat)
Ketchup (I approximated. I'm not a measurer)
Mozzarella Cheese
Ground Beef (I purchased a pound from Whole Foods and didn't end up using the whole thing)
Sweet Potato French Fries
1 Onion


Preheat oven to 475.

Cook ground beef. I added garlic salt, but totally up to you. Set Aside.
Carmelize your onion. I probably should have done this first, I didn't realize they were late bloomers.
Roll out your pizza dough. I poured a little olive oil on the bottom of the baking sheet and it came out nice and crunchy.
Squeeze some ketchup on the dough.
Sprinkle mozzarella cheese
Then your ground beef
Sweet potato fries on top of your beef
And top it all off with carmelized onions

Pop it in the oven for approx. 20 minutes give or take a few, or until crunchy.

  1. Oh how I enjoyed reading your blog post. And your pizza sounds like something Bailey would like too ;) Maybe I should try it one day! We miss you guys and are hoping to see you soon!
